Vanilla Cupcakes

This is the best cupcake recipe I’ve found, it works perfectly every time.

Vanilla Cupcakes Recipe

Ingredients (makes 12)

100g Butter (softened)

120g Self Raising Flour

20g Cornflour

140g Caster Sugar

1 Teaspoon Baking Powder

1 Teaspoon Vanilla Extract

2 Large Eggs (beaten)

3 Tablespoons Milk

Method

Pre heat the oven to 180c / 160 Fan/ Gas 4

Place 12 cupcake cases in a 12 hole muffin tin.

Beat the softened butter and caster sugar together well. Then add all the other ingredients together for about one minute but making sure everything is well combined. (Overbeating will make the cakes dense.)

Fill each cupcake case to half fill and bake for approximately twenty minutes. The cupcakes will be firm to touch and golden brown.

To make buttercream icing

To make enough buttercream for 12 cupcakes you will need 170g Icing Sugar and 100g Softened Butter. Also 1 Teaspoon Vanilla Extract. If you want to have lots of buttercream on each one use 250g Icing Sugar and 150g Softened Butter plus the 1 Teaspoon Vanilla Extract. I also added a little pink food colouring. NB I use food colouring in pots and add a tiny amount using a knife. Liquid food colouring could make your mixture too runny.

Here I have added some pretty lacy cupcake wrappers which go around the cupcake case. I covered a cake board with some roll out fondant and added some decorations to make a perfect Mother’s Day Gift.
